Mozzarella with melon sauce


It may sound a bit daring, but it tastes just wonderful. The key thing here is to use the very best mozzarella! Don’t try to save and then you will have a marvellous summer starter your guests will simply love!



For 2 portions

500 g water melon

1 firm tomato

1/2 red onion

1/2 red pepper

2 sprigs of mint

3 sprigs of basil

3 tbsp. lime juice

3 tbsp. olive oil

Salt, pepper, sugar

250 g buffalo mozzarella



Preparation

1. Peel the melon, slice it, remove the seeds and dice it. Remove the stalk and white part of the tomato. Dice the tomato, onion and pepper finely. Pluck the mint and basil leaves and chop finely.

2. Mix the melon, tomatoes, onions, pepper, mint and 2/3 of the basil with the lime juice and 2 tbsp. of the olive oil. Season with salt, pepper and a pinch of sugar.

3. Slice into the mozzarella crosswise, squeeze the liquid out gently and place on a plate.  Pour the melon sauce over it, sprinkle with 1 tbsp. of oil and sprinkle with the rest of the basil before serving.
